Most everything's done in "the cloud" now, so we have a markedly less-pronounced need for software that lives on your computer. But there are still a few must-haves out there that, were you to lose your laptop, would make working life very uncomfortable for at least a few hours.

Mine:

- A browser (Safari or FF, both have their ups and downs, and I wish I could consolidate 'em).

- GraphicConverter -- resizes photos, changes file type, etc. It will also do whole folders of photos all at once.

- TubeTV. Free app. Enables you to download and convert streaming YouTube videos.

WebKit - (Kind of a tweeked safari browser. A wee bit faster too.) I want to try Firefox 3 on my Mac but it just keeps crashing.

VLC Player - With so many codecs and formats, VLC is the way to go. It plays most media and can "fix" damaged, incomplete .avi files.

Sapiens - If you don't have this, you will love it. This app is for everything else, I mean everything. Make a little loop with my mouse and it opens up a menu to open other apps! On top of that, it "learns" your habits and programs relative to programs you are using (if you are using photoshop, it may give the option to open up illustrator, dreamweaver, picturesque, etc.) thus the name Sapien.
